This technique of marinating is an indispensable and treasured skill in the world of Edomae-style sushi.

At Sushi Waku, Master Chef Michi is pioneering a new era of Edomae sushi by passionately engaging with each seasonal ingredient. His extensive knowledge and experience, cultivated in Japan, the United States, and Hong Kong, enable a fresh approach that bridges the palates of the West and Asia.

We meticulously prepare our dishes in the traditional Edomae style, using only the freshest seasonal ingredients sourced primarily from the coastal waters of Japan. From the center of the counter, Chef Michi enjoys conversing with each guest, explaining the details of every ingredient served. His ultimate goal is to create a sense of "Ittaikan"—a feeling of oneness and shared experience. Through this connection, we hope to foster a special bond with each of our guests.

We highly recommend the Dinner Omakase Course (¥22,000). This generous course is a luxurious way to fully experience the bounty of the season, featuring:

  • 5 seasonal appetizer dishes

  • 10 pieces of nigiri sushi

  • Finishing with ara-jiru (fish broth soup) and dessert.
